A one-pan wonder — juicy chicken, roasted veggies, and the herby hit of Canchelo’s Original.

Prep Time: 15 minutes | Total Time: 45 minutes | Serves: 4

🧂 Ingredients

☐ 4 chicken thighs (bone-in, skin-on)
☐ 2 tbsp Canchelo’s Original Chimichurri
☐ 1 red onion, cut into wedges
☐ 1 courgette, sliced
☐ 1 red pepper, chopped
☐ 200g cherry tomatoes
☐ 2 tbsp olive oil
☐ Salt & black pepper
☐ Lemon wedges to serve

🍗 Instructions

  1. Preheat oven to 200°C (180°C fan).
  2. Mix chicken, vegetables, olive oil, salt, and Canchelo’s Original Chimichurri in a bowl.
  3. Spread everything on a tray and roast for 40–45 minutes until golden
  4. Squeeze lemon over the top and serve straight from the tray.
