â 4 chicken thighs (bone-in, skin-on)
â 2 tbsp Cancheloâs Original Chimichurri
â 1 red onion, cut into wedges
â 1 courgette, sliced
â 1 red pepper, chopped
â 200g cherry tomatoes
â 2 tbsp olive oil
â Salt & black pepper
â Lemon wedges to serve
đ Instructions
- Preheat oven to 200°C (180°C fan).
- Mix chicken, vegetables, olive oil, salt, and Cancheloâs Original Chimichurri in a bowl.
- Spread everything on a tray and roast for 40â45 minutes until golden
- Squeeze lemon over the top and serve straight from the tray.
